Healthy eating?

Well I’m trying too, especially as the fitness has to take a back seat. So if I can tackle snacking, and have lower calorie meals, at least this will make me feel better.

Cue loads of watching meal prep videos on YouTube, and finding some recipes I think I can use.

Only made 4 small ones to test out, see if we like them.

For my sweet cravings I’m trying a Chocolate Mousse made with dark chocolate, Greek yogurt,and cocoa powder, topped with milk chocolate chips. This was mere minutes to make. Refrigerated to firm them up, and create a mousse like texture. These were a hit, yay!!

For our evening meals we often have a chilli that we make with mixed beans, and mushrooms and mince with rice. I’m pretty happy with that, but I wanted a chicken counterpart. So I found One dish chicken and rice lasagna from Bethany Dobson on Instagram. Its Rice with chicken stock, chicken diced, some veggies like carrots, onions and mushrooms, passata sauce, Greek yogurt and put into the oven 180 for 45mins.

Hopefully its nice, it certainly was easy enough to make and should feed us both for 2 days, so I like the spoon (energy) saving. So far I’ve lost 7lbs this month, and I intent to get more off over time, but slow and steady so its more permanent.

Filling and tasty. Happy with that. Though I confess I would swap a few things, I think I would prefer my rice separately and swap carrots for broccoli or green beans.
